We made these seafood skewers for a house party (ok... a Barbie Movie viewing party). Definetely try them out!
Ingredients (Makes 4 Skewers):
Oil (1 tbsp)
Salt (1 dash)
Garlic Powder (2 dashes)
Ground Ginger (1 dash)
Paprika (4 dashes)
Lime Juice (1 tsp)
Cod (raw, cubed) (4 oz.)
Shrimp (raw, peeled, deveined) (4 oz.)
Canned Pineapple (3/4 cup, chunks)
Skewers (4 skewers)
Mama Ray's Seafood Blend (to taste)
Instructions:
1. Skewer the shrimp, cod, pineapple in an alternating pattern
2. Mix the dry spices in a small bowl. Rub the skewers with half of the oil and pat the spices evenly over them
3. Heat the remaining half of the oil in a large skillet over medium heat. Add the skewers and cook for about 5 minutes, flip them gently to the other side, and cook for another 5 minutes or until the shrimp is pink and the cod is fully cooked.
4. Serve with a sprinkle of lime juice.
